Cauliflower Pithivier in Gluten-free Cheddar Puff Pastry

  • Dough will be quite sticky. Make sure the work surface and rolling pin are both well floured. Use pastry cutters to cut out discs. If you do not have any large enough, use a sharp knife to cut around a saucer, plate or an upside down bowl. Make cheese straws with leftover pastry. Re-roll trimmings and cut into 1 cm thick strips. Caramelised Red Onion Chutney

Place jar and lid upside down in the centre of the Varoma and steam 20 min/Varoma/speed 1. Leave to drain – do not dry or touch the inside surfaces. Alternatively, thoroughly wash jar and lids in hot, soapy water. Rinse by pouring over boiling water. Prepare for filling, if needed, by placing on a clean tea towel in a roasting tin and heat in the oven at 100˚C until required.
